Detox Cauliflower Rice

  • 2 cups thawed cauliflower rice (from frozen)
  • 2 cloves garlic, minced
  • 3/4 inch fresh ginger, minced
  • 1 tbsp. olive oil
  • 2 tbsp. coconut aminos
  • 1 tsp. sesame oil
  • 1/4 cup water or broth
  • 2 green onions, chopped
  1. Coat bottom of medium skillet with olive oil and turn to medium heat.
  2. Add garlic and ginger. Sauté for 2-3 minutes.
  3. Add cauliflower rice. Cook until cauliflower begins to get tender. (Add broth or water as needed to keep from sticking)
  4. Add coconut aminos and sesame oil. Stir and cook another couple minutes.
  5. Stir in green onions.
  6. Add salt and pepper to taste.
  7. Plate and enjoy!
